I decided to play with a recipe I got from another lc board. Actually 2 recipes from the same basic idea.
Chocolate Nut Bark
1/2 cup good coconut oil, I use Nutive, must be in the liquid state. If not, just pop in the microwave oven until it's liquid.
Mix 1 tbs cocoa powder with 2 tbs Sweet Perfection sweetener (this is oligofructose, the same sweetener in ChocoPerfection bars.) Of course, you can sweeten to taste with whatever AS you prefer.
Blend in the coconut oil and 1 or 2 tbs chopped nuts.
Pour onto a plate lined with waxed paper. Pop into the freezer for 5 or 10 minutes. Take out and break into pieces. Put into a storage container of your choice and keep in the fridge. Because of the coconut oil, it's hard to pig out on this stuff. And you cannot keep it in a candy dish on the table, it'll melt!
Coconut Bark
This is the same basic recipe, except you use 4 tbs finely shredded unsweetened coconut instead of the cocoa powder, and omit the nuts. If you want a bit more coconut flavor, you can and a few drops of coconut extract.
This is a good candy for when you need just a nibble of something sweet. The only carbs you need to count are the few in the cocoa and the coconut, and the coconut has a lot of fiber. The Sweet Perfection is like 5 carbs per cup, so 2 tbs is essentially nothing. So, unless you eat all that candy at one sitting, you're not getting but a tad bit of carbs. And if you do sit down and eat it all at once, you're going to get really sick!

Nita, have you ever tried making the Coconut Bark with toasted coconut? I think I'm going to have to order some Nutiva coconut oil and give this a try.

I don't know how many servings you get from a batch of the coconut bark but I ran it through MasterCook and I can see how you'd have to be careful with this stuff. The whole batch only has 1 net carb yet it has over 1,000 calories. Yikes! That makes sense though since it's almost 100% fat.
1072 Calories; 122g Fat; 1g Protein; 3g Carbohydrate; 2g Dietary Fiber; 1g Net Carb

Whenever I make it, I just do two tablespoons of coconut oil instead of half a cup. I'm pretty sure that's the recommended dosage of coconut oil for one day, anyway. I usually add some whole, raw almonds to the mixture along with the cocoa powder and the Stevia, and it tastes just like my favorite candy bar, an Almond Joy! I was so happy when I first tried it. I also want to find unsweetened coconut flakes, just to make the texture more like the candy bar. What really surprised me is that this stuff tastes BETTER than the manufactured product...THIS stuff is the real thing!
