4 medium chicken breasts, pounded to 1/2 inch thick
1 cup mayonnaise
1/2 cup Parmesan cheese
1/4 tsp garlic powder
1 tsp paprika (makes it look Purty)
Preheat oven to 350. Butter or oil a 13x9-inch baking dish and arrange breasts in dish. In a small bowl mix mayo, parmesan, and garlic powder. Cover the tops of the chicken breasts with this ALL of this thick mixture I use a rubber spatula to layer it on. Sprinkle the tops with Paprika. Bake for 45 minutes or until cooked through! The flavor is anything but boring!
This works great with Cod fish filets too, just add i tbsp lemon juice to the mayo mixture, and serve with lemon wedges. You will want to reduce cooking time for fish, just check the package for baking time, probably about 30 minutes for thick filets. It will taste similar to Luby's restaurants famous baked fish, which you know of only if your in the South
