Hi all
I've been "over here" a week now from an unheathy low-carb, low-cal, low-fat WOE (and woe was me!)

Next Saturday we're having guests for a midday party and need to plan a menu.
Current Plan: party-length hero for them and maybe a pan of sausage and peppers. I can have the former if I get low-carb tortillas and wrap up the insides of a slice or two. The latter is totally good for me. Thought I'd make devilled eggs and a big salad. DH thinks we have to grill something to be good hosts, so I'll leave that to him. We'll get some dessert stuff and fruit. I'll try to make one of Judy Baker's awesome pies if I can find the ingredients in time.Anyone have any other ideas for me? This has been stressing me and my DH a lot. But then, we have a sick old kitty, and a few other challenges, too. I am totally open to easy food solutions to being a carefree Hostess with the Mostest, but the shrinking bod! BTW, I got knocked over by a motorized scooter/skateboarder yesterday in the Village in NYC yesterday, not hurt but bruised pride and irritable for the rest of the day!

Sunny, wow what a week, just testing your patience huh? On your party, if your DH wants to grill why not do some fajaiti (my Mexican spelling is bad), you have all the ingredients.
The other day I mixed up some ground italian turkey and put in mushroom caps and put in the oven--so good. Top with shredded moz cheese and pop under broiler.
Before this diet I use to take the tortillas, spray heavy with pam, sprinkle with cinnamon and equal and broil until really crisp. Break into pieces and serve. Actually i would serve them with s/f pudding and it tasted like pie. Hope you have a better week this week.
by the way, went to check on my ticket for refund request and was told "You do not have enough permissions for this request" I do not know the language she speaks. Got to kiss a lot of frogs before you get the prince.

Here is a good recipe for appetizers, and I found it in a Heloise column. When I read it, I thought, "Low Carb!" I have the recipe on my refrigerator at all times. My family likes it, and I have some pretty picky eaters.
Olive Spread
6 oz softened cream cheese
1/2 cup mayonnaise
1 cup chopped green olives with pimentos
2 tablespoons of the olive liquid
dash of ground pepper
1/2 chopped pecans (I use walnuts. Almonds might be good, too.)
Combine and mix well. This can be spread on anything low carb, like celery, pork rinds, low carb bread or toast, even cucumber rounds. It would be good stuffed in a tomato, too, maybe into some larger cherry tomatoes for pretty little appetizers. My favorite, however, is to spread it on a low carb tortilla, roll it up, chill it for a while, then slice the roll, and slicing it on the diagonal makes pretty slices. For a little more color, and nutrition, you could dice some cheese and add to the mix, like cheddar, or even pepper jack for a little kick. It's a good appetizer for a party, and no one has to know it's low carb. (I won't tell if you won't).
Another one:
Green Onion Dip
This recipe is great with raw veggies, a great alternative to ranch dressing.
And it's so easy to make.
8 oz cream cheese (softened)
8 green onions, roots removed (use the green part, it gives the dip its color)
Cut them up as they will blend better
1 clove garlic, or garlic powder to taste
1 pint (2 cups) mayonnaise
Blend thoroughly in a blender. Serve with broccoli, cauliflower, celery, carrots, pork rinds, cherry tomatoes, or any other favorite low carb nibble.
If it is hard to blend, try blending half at a time.
This is a very pretty dip. Lots of people won't touch it because they think it's guacamole, and they don't like avocados. (Weird people, huh?) So, just don't tell them, and that will leave that much more for you.
I suppose that if you wanted a little "kick" to this dip, you could add a dash of cayenne or some red pepper flakes. This is also good for your non-lc friends and family, they could have it with chips, if you were able to serve chips and not eat them, too.
Of course, your hubby's idea of grilling is great, but not just meat, how about zucchini or yellow squash, bell peppers and onions? Serve it all up with your lc tortillas. Make a nice lc punch, or have a variety of other drinks. You're all set.
