Full Version: Easy Creamy White Chili

This is very easy and delicious..

However, it does have beans in it..If you don't want to do the beans, you can use cooked cauliflower instead..I think it's best to cook it separately, so the soup doesn't taste cauliflowery, then add it at the end to heat it up..smile.gif

1 pound of chicken breast, cooked OR raw..chopped up..(I used a large can of
chicken breast meat)
1 Tbs. olive oil
1 chopped onion
1 clove garlic
1 14 ounce can of chicken broth
1 or 2 cans of chopped green chilies
1 15 ounce can of white beans, Great Northern..drained and rinse
1/2 tsp. salt
1 tsp. cumin (you can add more if you like)
1/4 tsp. cayenne pepper
1 cup sour cream (you can use regular or non-fat)
1/2 cup cream or CCountdown milk

In a 2 quart sauce pan add oil and cook onion and garlic. Add chicken and
cook (if raw), otherwise, just sautee lightly . Add broth, chilies,
drained beans, and seasonings. Cook for about 30 minutes until flavors
blend. Just before serving, remove pan from heat and stir in sour cream
and cream and stir gently..I didn't heat it again..

This will serve 4 good sized servings. The beans are slightly carby, but good
carbs.

You can serve in bowls and sprinkle shredded Cheddar on the top of each
bowl..

Easy and yummy.
