Barbo's Yellow Squash Soup with Cheddar Cheese TNT
6 large servings
1 lb. yellow crookneck squash, cubed
1 red onion, cubed
1-2 tbs. extra virgin olive oil or oil of choice
2 c. chicken broth
2 tsp. chicken granular powder
1/8 tsp. hot sauce
Black pepper to taste
2-4 oz. grated sharp Cheddar cheese
1/4 c. sour cream
Chopped green onions or chives
Heat a large non-stick pan, drizzle with evoo (extra virgin olive oil)
Saute all veggies. Add remaining ingredients exept sour cream, cheese
and chives.
Place lid on pan and cook for about 15 minutes or until squash is soft.
Either place in food processor, or using hand held blender, add the cheese
and whirl until smooth. Soup will be thick. May thin with cream if you like.
Remove when cheese is melted. Place in soup bowls and add sour cream
and a sprinkle of green onions or chives.

and then their addicted to it I just bought some crookneck yellow
squash today so that I can make some more. Dh always sez 'bring it
on, he loves it.

Any idea of Carb count? I LOVE me some soup and this one looks like my DH will eat it (creamy and cheesey ...bring it on for him).

These counts are based on using the higher amount of any ingredients listed and a small onion (2 1/2 ounces).
Per Batch: 1021 Calories; 81g Fat; 46g Protein; 29g Carbohydrate; 9g Dietary Fiber; 20g Net Carbs
Per Serving (1/6 recipe): 170 Calories; 14g Fat; 8g Protein; 5g Carbohydrate; 1.5g Dietary Fiber; 3.5g Net Carbs

This is the best - I added leftover ground beef and some green chilies to make nacho cheese soup - I loved it when my coworker came up to me to complain yet again how atkins was was so unhealthy, and I wasn't eating enough veggies , pointing out that there was a pound of veggies in it- gotcha!
Oh btw, you can also do the yellow squash trick with chili so it's less soupy - makes it wonderful and thick . Thanks for the idea LindaSue!
Question: Is yellow crookneck squash the same as summer squash--you know,like zucchini but yellow?

Yes, pretty much like zucchini carb-wise but has a slightly different flavor. They're interchangeable in most recipes except where the color might be important.
