I may have asked this before here, but I could not find my original post. I am off to order Barry's new book and some coconut oil and wanted to know what the BEST brand is?
Im ready to give low carb a fresh new start and stick with this once and for all!

I get mine at my local Vitamin Shope. They sell the Nutiva brand -- extra virgin, unrefined, yummy! It's cheaper here than at a grocery store. I got a 52 oz jar for $24.00.

I agree with Dave, watch the label for refined vs. unrefined. Spectrum makes both. The refined coconut just doesn't have that nice coconut aroma and taste, plus it's REFINED.

coconut oil is good to just be eaten or you can saute your veggies with it---it will kick start your ketosis----

MCT--medium chain triglycerides--are fats that are naturally found in coconut and palm kernel oil. MCT's are more easily and rapidly digested than other types of fats, as they require lower amounts of enzymes and bile acids for intestinal absorption. MCT's are metabolized very quickly in the liver and are reported to encourage an increase in energy expenditure, while decreasing fat storage. Numerous studies suggest that substituting MCT Oil for other fats in a healthy diet may therefore help to support healthy weight and body composition.

MCTs do not cause weight gain because they stimulate thermogenesis (the process in which the body generates energy, or heat, by increasing its normal metabolic, fat-burning rate). A thermogenic diet, which is high in medium-chain triglycerides, has been proposed as a type of weight loss regime.

Dietary medium-chain triacylglycerols suppress accumulation of body fat in a double-blind, controlled trial in healthy men and women.

Enhanced thermogenesis and diminished deposition of fat in response to overfeeding with diet containing medium chain triglyceride.

The role of oils containing triacylglycerols and medium-chain fatty acids in the dietary treatment of obesity. The effect on resting energy expenditure and serum lipids.

Coconut oil is great..

Some folks love the coconut taste, some don't. I use both. Cold Expeller Pressed is tasteless and can be used in cooking/baking without a coconut taste.

Many people take 1-2 tsps. and put it in hot tea and drink it..or they use it coffee or SF hot chocolate.

Bear in mind that coconut oil gets really hot fast, so be careful.

I eat it straight up and use it when cooking. COCONUT OIL IS DA BOMB! Butter is also VERY healthy for you, so eat up. AVOID MARGARINE!!!

oh yeah it has a low burn rate--but i blanch my veggies prior to sauteing and do it on low heat---never fry in coconut oil

Nutiva is great, I get mine from www.netrition.com

I just brown sliced zucchini in it for supper, and it was just too good. I use it in my one minute muffin, scramble my eggs in it, I've even put some in my coffee. And when you get some on your hands, just rub it in, it makes a great moisturizer.

I did a lot of research after finding out about all the awesome benefits of virgin coconut oil and I think the brand on Mercola's web site is the best, seems to be the least processed. Jimmy, do you use Mercola's site for help, great site! (Not that yours isn't, hahaha!!!)

You can buy it in different sizes as well...I get the biggie and it lasts.

Mercola is for the most part an excellent source of information. Although I don't always agree with him about EVERYTHING, his stuff is usually reliable.

Has anyone had trouble with coconut oil making them nauseous? That was my experience with it. I'd like to give CO another try, but I think this time I'm going to start with a smaller amount such as 1/2 tsp and work my way up to 1 TBL.

I personally like the Barlean's Organic Virgin Coconut Oil the best of all that I have tried. It has a nice flavor and the texture seems more palatable. I try to take a spoon or two about twenty minutes before meals, per the advice of Dr. Mary Enig, author of "Eat Fat, Lose Fat."

Hey Karen, it may just be a mental thing about fat that's making your nauseous. I've never had an issue with it doing that to me.

I need to buy some more coconut oil. The gunk they sell in Wal Mart is too processed.

When I took my coconut oil, I would refrigerate it in mini ice cube trays and then pop them in. They taste pretty good that way.

I had bought some NUTIVA coconut oil last week, and this weekend, I made my husband and boys some blueberry muffins. Instead of the vegtable oil it calls for, I used coconut oil. They never knew the diff, and they raved about how yummy they were. Usually, when I try to sneak something healthy in, the radar goes up(like ground turkey, they can taste it anyway I make it), but they loved it in the muffins!

I posted a candy recipe in the cooking section using coconut oil, a great way to get your oil in and have a treat at the same time. I use liquid Splenda, so the carb count is hardly anything, and the taste is great. And it's simple to make. I made 2 batches over the weekend, did some tweaking, and here's how I did it:

Mix 1 or 2 tbs cocoa powder with some chopped nuts (omit if you are not eating nuts)
1 cup equivalent of artificial sweetener (I use liquid Splenda, it is 0 carbs)
Mix in 1 cup coconut oil, stir well

Pour into either a waxed paper lined plate, or into a large size Dixie plate (I really like using the Dixie plate, it worked better for me than using waxed paper)

Put into the fridge to harden. Break into pieces, store in a covered container in the fridge.

For coconut flavored candy, omit the cocoa and nuts, and add 1/4 cup each coconut flour and unsweetened grated coconut. My husband isn't a coconut fan, so I get this one all to myself!

This is one you can experiment with, maybe try adding mint extract to the chocolate, or use some flavored syrups instead of the Splenda. It's an easy recipe to play with, and so easy to make.

Nita, I tried making something like this but it was a different recipe than what you have posted. Do you melt your coconut oil before mixing in the other stuff? I melted mine but I think I may have melted it too much because the splenda didn't mix in very well. I had no idea it helped your metabolism....that's great info!

I just made a new one that is wonderful. . .

2 tbs coconut oil
2 tbs peanut butter
1-2 tbs hazelnut DaVinci's syrup

Mix well and freeze--if you like peanut butter fudge, this is a winner. I think this is my new nightly dessert!

Jimmy, I don't see the resemblance. I watched your blog from the link above ( huh.gif the first one I've watched (but not the last! biggrin.gif .)I don't know why but I was surprised by your accent. biggrin.gif I knew you were from the Tennessee/Carolina's area. Christine looked fantastic - it was nice to put a face to her name.

I bought my coconut oil at GNC . . . the brand is Now: it is Virgin Coconut Oil, cold-pressed and unrefined. It was $9.99 for a 12 oz bottle. I love it although I am gong to shop around for better prices.

I realize Im late in this forum but I wanted to say I get my Virgin and extra virgin Coconut oil off Ebay. Expeller pressed by the gallon. Super good, I cook all of my families baked goods with it. The Virgin has very little flavor, the extra is simply yummy right off the spoon.

Tropical trad. I bought one of eatch virgin and the other type. The one I opened was so so, I can cook with it, but to eat it straight, almost tasteless

Hello Sandi!

I buy Agateguard for the sligtly flavorless stuff. The yummy oil is call "Organic Expeller Pressed" on eBay, both come in gallons. My daughter in law is from the Phillipines and I have learned sooooo much from her. As I understand it, the US bought so much of our coconut from the Phillipines but the War in 1899-1902 cause our country to search for other oils. What a tragedy! My daughter in law says the older people in the Phillipines who wont turn to fast foods and eat the traditional dishes live a very long time. I shall include a link to the Coconut research center, very very good info there!

Ok, I did it, I bit the bullet and had a TBSP of coconut oil by itself! ohmy.gif I could eat it that way every day. I am not sure I will but I could! laugh.gif

I am about to order my coconut oil. I am confused however, I just read one of the posts and it says not to fry in it? So is butter only safe to fry in? So what do you use coconut oil for other than off the spoon or in coffee? And how much should I be eating per day to cut out cravings?? Sorry to sound so dumb, this is all so new for me!!!!

and they are good, but when I did a burger, It made the meat taste like it was bad.
So Yes after reading Eat Fat, look think, he says use it for everything. You need to try it and see what you like.

I've used it to scramble eggs in and make coconut bark. My brand was spectrum and it doesn't really have any coconut taste. I just got a jar of Nutiva yesterday in the mail...can't wait to try it! I've never read you shouldn't fry with it....in fact, I think it's great to fry with it. I've read many people use it in baked goods too.

I really, really liked this! Thanks for posting it. The comparison to peanut butter fudge was perfect.

The problem I had with the "chocolate bark" was that despite the fact that I used alot of cocoa powder and it looked like chocolate, it still came out tasting like coconut oil. Anybody have any idea if I did something wrong or is that just sort of how it tastes? It's not bad, especially with the almonds, but it's just not chocolatey. In fact, if it would have been called "coconut bark" I probably would not be posting this.

The peanut better recipe turned out wonderful. I'm going to play around with it with other DaVinci flavors (almond roca and white chocolate, anyone?) and maybe throw some cocoa in. Have you tried playing with it? If so, how did it turn out?

I used DaVinci French vanilla syrup and after freezing, covered it with 2/3 SF chocolate syrup & 1/3 coconut oil mixture (ratio--not actual measurement--I just eyeballed it until I felt I had enough). Refreeze and, for me, it was a great peanut butter cup.

Num num, how do you keep from eating it all at once?

By the way Jimmy doesn't really remind me of Richard Simmons, he's way too tall and his hair is not curly enough. He reminds me more of the energizer bunny!
