This is my favorite at work breakfast. Imagine my surprise when my co-workers were dying to know what craaazy low carb breakfest I was eating, and why there was always a dozen eggs and cream cheese in the mini fridge.
Ingredients
2 large eggs
1 tablespoon of whipped cream cheese (add more for XL or jumbo eggs)
1/2 teaspoon of dehydrated chopped onion
dash of garlic powder
Microwaves vary so I suggest you watch your eggs the first few times you make this.
Crack both eggs into a microwave safe bowl (spray with PAM first for easy cleanup). Scramble eggs with onion and garlic. Heat in microwave until eggs they are just underdone, about 45sec to 1 min. Stir in cream cheese until thoroughly blended. Finish heating until fully cooked. Eggs should by fluffy, super creamy and full of flavor.
