Here's a Bran Muffin recipe that turned out great. It makes 12 nice sized muffins.

LOW CARB SUGAR FREE BRAN MUFFINS

Servings | 12

Breakfast | DON'T OVER MIX

Ingredients

1 cup 100% Bran Cereal
1/2 cup boiling water
1 tbs. vanilla extract
1-cup buttermilk (Sour Low Carb Milk) for less carbs
2 eggs
1/3 c. oil
1 cup SPLENDA No Calorie Sweetener
1 tsp ground cinnamon
1 cup CarbQuick
1 tsp baking soda
1/2 c. walnut or pecan pieces
Peel of one large orange

Instructions

POUR BOILING WATER OVER BRAN.
LET SIT 5 MIN. MIX FLOUR
AND ALL DRY INGREDIENTS TOGETHER, SET SIDE. IN SMALL
BOWL MIX BUTTERMILK, EGG AND OIL. POUR EVERYTHING OVER TOP OF CEREAL AND MIX UNTIL
JUST INCORPORATED. BAKE 350 FOR ABOUT 15-18 MINUTES

*I USED THE PEEL OF ONE LARGE ORANGE
I use the lowest Carb bran that I can find. This does not cause weight gain or
elevated sugar. I have one every other day with eggs and bacon. yum.

I've purchased just about everything to try this recipe, it looks fantastic. When you get a chance, Linda, would you you run it through your nutrition software and post the carb and calorie counts?

BTW, I love your site and really admire the painstaking research you did on the flavored sucralose syrups. My daughter and I found it very helpful in choosing what to order, and are satisfied with our choices. I truly hope you and Jimmy will one day publish a cookbook , and offer an option for autographed copies. smile.gif

1 cup 100% Bran Cereal

1 cup buttermilk or 1 cup Carb Countdown 2% milk
2 eggs
1/3 cup oil
1 cup granular Splenda
1 teaspoon cinnamon
1 cup Carbquik
1 teaspoon baking soda
1/2 cup walnuts
Zest of 1 large orange (I figured about 2 tablespoons - Linda)

With buttermilk and granular Splenda:
Per Muffin: 160 Calories; 12g Fat; 5g Protein; 11g Carbohydrate; 4g Dietary Fiber; 7g Net Carbs

With low carb milk and granular Splenda:
Per Muffin: 160 Calories; 12g Fat; 6g Protein; 11g Carbohydrate; 4g Dietary Fiber; 7g Net Carbs

With buttermilk and liquid Splenda:
Per Muffin: 152 Calories; 12g Fat; 5g Protein; 9g Carbohydrate; 4g Dietary Fiber; 5g Net Carbs

With low carb milk and liquid Splenda:
Per Muffin: 152 Calories; 12g Fat; 6g Protein; 9g Carbohydrate; 4g Dietary Fiber; 5g Net Carbs

Thanks to everyone who worked hard on giving the nutritionals of my recipe.

I take great pride in coming up with good things to eat and still stay OP.

I'm allowed 30 carbs per day and I don't want to spend more than 5-6 on
breakfast, so 1 muffin, 2 eggs, coffee with cream. I am happy happy.
