Sure. It's so simple, you might have to change it a little to suit your eating plan, but here it is.

I do them two ways. I peel and cut the rutabaga into about a 1/4" dice and partially cook them in the microwave or parboil them. I like onions so I chop a few of those too. Sometimes I will dice up a couple of slices of bacon. When the bacon begins to brown and release the fat, I add the rutabaga and onion and salt and pepper to taste. They will brown up faster than potato so you have to watch them. If you don't want to use bacon then sometimes I use butter instead and even melt cheese on them occasionally. You see what I mean about my fat tooth. LOL.

I don't remember what the paleo diet says exactly about fats, but if I remember correctly he's not real big on dairy, so you could really use any type of fat or oil. A "fruity" olive oil might clash with rutabaga so if you use that I would use a less expensive olive oil with a more neutral flavor. I usually have them for breakfast topped with an omega egg.

Rutabaga sometimes vary a little in flavor, but the milder ones really taste a lot like potatoes. smile.gif

Have you tried the rutabaga yet? I always used to do hash browns with cauliflower, but the texture of the rutabagas is a lot more like potatoes.

I was even thinking of trying a mixture of both to do mashed "faux"tatoes. I was wondering if you slipped a tablespoon full of those frozen mashed potatoes (not many carbs in a tablespoon full for a whole recipe) if it would add even more potato flavor. I've been going to try it, but I haven't yet. That would be a good question for our resident recipe moderator, Linda.

I put a rutabaga on the grocery list! Since cauliflower is lower carb, I might try a mix!

melodiegale in Dana Carpender's last cookbook she actually said adding a small portion of potatoe (less than a 4th I think) gave the cauliflower dishes a more potatoe like consistency.

If you don't have the last book I would be happy to look up the factual amount as my memory may be incorrect.
