These are quick and easy. You can double the recipe very easily, too.

Cream Cheese Muffins (from LCF's)..

1 8 ounce package of cream cheese, softened
1/4 cup of sweetener
1 egg
1/4 tsp. vanilla or almond extract..or any flavor you like

Soften cream cheese about 40 secs in the microwave. Add other ingredients. Beat
with a mixer until smooth. Pour into 6 Pammed muffin liners in muffin pans. Bake
at 350 for 20 minutes..

makes 6.

Refrigerate after cooling.

Thank you so much for posting this! biggrin.gif I've been searching all the LC forums for this recipe, since I saw someone a week or so ago mention eating a couple of them for breakfast on the way out the door.

So anyhow, I made some today, since I still had a pound of cream cheese left over from the big cheesecake I'd made last week. I was surprised that they didn't turn out like big puffy muffins, but that's ok, they're extremely tasty!

I think next time I might try using some SF Raspberry Da Vinci in them instead of the vanilla and sweetener... or maybe mixing the raspberry syrup in part of the mix and swirling it into the muffins before baking.
