I have read your posts and in some you have referred to your Blue Cheese Dressing. Would you mind posting the recipe please?????

Sure!

1- quart Hellman's or Best-Food Mayonnaise(or similar)
1-pkg 8 oz cream cheese
1- pint half and half
1-small sour cream (4 oz) (not more or it will overwhelm)
Lemon Juice - an ounce or two(it opens everything up)(not to much and not to little)

(all of the above are 'real' ingredients or as close as you can get and 'not' light)

Some Parsley Flakes if you want.

12 oz Blue cheese or Roquefort

Makes about 2 quarts - about $3 a pint!
(it could be thinned to half that or twice that)(I like it thick)

Refrigerate!

It will get thick, you can leave it thick or thin it to your liking with half and half or cream.

We low carbers might substitute heavy cream for the half and half!

You could build a New York Restaurant around this dressing!

You died and went to heaven! A lot of people use blenders and mixers and whatnot to blend these ingredients which is good and a lot of people like them made this way! I just use a common fork and spoon like you would eat with and a big bowl or pan and break them down and mix them in this way! It works great for me and the way I like my dressing! I used heavy cream this last time and it worked perfect and was the exact consistency that I like which was thick and creamy!

Is there a way to make a similar ranch style dressing to the reciepe that you just posted?

Just take out the Blue Cheese and that would be a ranch dressing! You can leave out the Blue Cheese and add some catsup and make a thousand island dressing! Maybe thin them a little. You can also take the blue cheese out and add chopped pickles and onions and a little garlic and have the 'worlds greatest tarter sauce'!

I'm from australia so I'm going to have to source an alternative mayo - could you use homemade????

Also, what is half and half - not familiar with that one here wink.gif

BTW - took me a bit of hunting but finally found the Atkins book here!!!! Makes for some interesting reading.

Any kind of mayonnaise will work. If it's good tasting mayonnaise it will make good dressing. Half and half is half milk and half cream. 1/2 & 1/2 That Atkins book is the best thing there is, low carb works beautifully. It's a discovery! Good luck to you!
