I've seen several recipes for hot lc cereal, and I've experimented with variations. I made this concoction, and found I like the texture the best; it's more like regular hot cereal. With lots more protein and fiber than you'd ever find in Cream of Wheat or Malt O Meal.
Mix equal parts of the following:
Flaxseed meal (I prefer Bob's Red Mill Golden Organic, but use what you like, of course)
Whey protein powder (mine is vanilla flavored, but whatever you like. I do not use soy protein powder, because I don't care for the flavor and texture, but if you like it, of course you can use it.
Coconut flour
Store in the fridge. Flaxseed meal can go rancid quickly!
Put a bit in a bowl, add boiling water until you get the texture you like. Sweeten or not, add some cream, or Calorie Countdown milk, or soy milk, or almond milk.
You can also use this mix for the OMM.
Flaxseed meal and coconut flour are both nearly all fiber. The whey protein powder has a lot of protein (duh, that's why they call it protein powder!) So if you have this for breakfast, you're getting a great start to the day. A wonderful alternative to eggs!
The brand of flaxseed meal I use has 4 gms carbs, 4 gms fiber per 2 TBS.
The coconut flour has 10 gms carbs, 9 gms fiber per 2 TBS.
The protein powder will vary according to brand.
