When I'm in the mood for sushi here's what I usually do - of course option #1 is Sashimi I LOVE salmon or tuna, not to thrilled about tilapia... too fishy for sashimi... but I usually do it w/ the paper slice of ginger or small dab of wasabi and then I dip it in soy sauce.
Second option - my HEB has a sushi bar and the chef there will make a riceless sushi using a cucumber wrapper instead of the seaweed and the filling is a crab/mayo mix with a small slice of avacado in the middle... YUUUUUMMMY!!!!
