The latest post on Diabetes.About.comis "Muffin Nation - Expanding Portion Sizes in America." In the 1960s, muffins were about the size of a tennis ball. Now they are huge. The whole gist of the post is about the fat & calories in the muffins, then & now. There is nothing about the white flour & sugar in the muffins. Nothing about the fact that they contain more carbs than I eat in a day. No, it's only about fat & calories. Maybe some have trans fat, and that's bad, but otherwise, it's the carbs, especially the refined carbs that raise blood sugar, not the fat.
IMHO, diabetics shouldn't even eat muffins unless they are low carb, made with nut flour or flaxmeal. I agree that the current "softball" muffins are worse than the "tennis ball" muffins, but only because of more flour & sugar (and possibly trans fat). The only reason for mentioning muffins on a diabetes site is to say they are bad for blood sugar and suggest low carb alternatives. Yet the conclusion here, "The easiest way to stay on a healthy track is to be aware of how many calories and fat are in the portions that we buy and eat." More low fat nonsense.
This site does have some good info, but you have to look past the low fat dogma.
