Carol’s Simple Seafood Salad
1 pound scallops
1 pound precooked large shrimp
2 tablespoons butter
½ cup yellow onions, chopped
3 garlic cloves, diced
½ cup scallions, sliced
½ cup celery, chopped
3 tablespoons fresh parsley, chopped
½ cup mayonnaise (I use Smart Balance for the Omega 3s)
½ teaspoon salt
Melt butter in a large skillet and saute scallops, onions, and garlic until scallops are cooked. Toss in shrimp and saute a minute for flavor. Let cool. Combine cooled scallop and shrimp mixture with the rest of ingredients and mix well. Chill before serving.
Nutritional Info Per Cup: Calories 282 Fat 17 Carbs 6 Protein 27.

This sounds wonderful. Do you know about how many minutes the scallops take to cook? I may go home from work and make this today.

If they're really small ones, they'll only take a matter of seconds to cook. As soon as they look opaque they should be done. If you overcook them they can get rubbery.

Thanks Linda. I made it yesterday, but just used shrimp and halved everything else since I didn't want such a large amount. Very good! I'm going to go home from work this morning and eat some more of it.

Scallops can be a bit carby anyway but I do like them and eat them occasionally.

I actually prefer just shrimp myself but I had a bag of scallops in the freezer I had to get rid of. LOL. I end up making big batches of everything as my husband and son eat a lot!
