Ok since the veggie thread is scarce my favorite quick veggie to have with dinner is

Sautee'd cheesy spinach!

1 Package frozen chopped spinach
2 cloves garic minced (I used the pre minced jarred garlic, about 1 tbsp)
Dry or fresh grated parmesan cheese ( I don't measure this)
Olive oil and butter for sauteeing.

1 tsp onion powder (you could use fresh chopped onion here too, but I am lazy)

heat 1 tbsp olive oil and some butter to your liking (I like this buttery) until hot enough to begin sauteeing the garlic.
cook garlic for about a minute or 2 and then add spinach (drained well of course), and mix up over medium heat. Add onion powder, pepper to taste, and stir well.

Continue heating through on low to med heat until ready to serve. When ready, toss with parmesan cheese.

YUM!

One package of spinach is 7 net carbs total.
2 servings would be good from this, and thats 3.5 net carbs, (plus any minimal carbs from the cheese)

My way w/spinach:

10 oz bag of fresh baby spinach
2 T olive oil
1 to T minced garlic
sea salt/pepper to taste

Prepare this at the last minute as the spinach will release a lot of it's water. Simply heat the olive oil in a very large skillet and sautee the garlic. We like LOTS of garlic in this recipe - you can't really have too much. When the garlic starts to turn golden, dump in the spinach and turn it over with tongs as it starts to wilt. Season w/salt and pepper to taste and serve immediately.

I use frozen chopped spinach in place of pasta when I make it for the family. They get whole wheat pasta, I do spinach and we all have meat sauce and parmesan cheese. Yum!

I'm a fresh spinach fiend.From salads, to omlettes, to cooked with a lot of butter on it - I love the stuff.
My favorite:
Toast some walnuts in pan with a little oil then toss a bag of fresh spinach in. Toss around long enough to wilt and get bright green . take off and serve.
I used my leftovers from last night's batch with some leftover turkey, mayo and djon- best turkey salad ever tongue.gif
Also instead of nuts, sausage also works very well. leftovers make great omlettes !
