I get about a dozen health, nutrition, and fitness newsletters a day and most of them are STILL encouraging low fat / high carbohydrate diets. Although their fitness and health info is usually all right their "healthy" recipes look like this one below and notice it has 39 grams of carbs per serving and hardly any protein. DON'T eat this!
Quinoa and Black Bean Salad
Serves: 8
This substantial salad offers a healthy balance of vegetables and protein. It provides a wide range of textures, colors, and seasonings.
INGREDIENTS
1-1/2 cups quinoa
1-1/2 cups canned black beans, rinsed and drained
1-1/2 Tbsp. red wine vinegar
1-1/2 cups cooked corn (fresh, canned or frozen)
1 red bell pepper, seeded and chopped
4 scallions, chopped
1 tsp. garlic, minced fine
1/4 tsp. cayenne pepper
1/4 cup fresh coriander leaves, chopped fine
1/3 cup fresh lime juice
1/2 tsp. salt
1 1/4 tsp. ground cumin
1/3 cup olive oil
DIRECTIONS
1. Rinse quinoa in a fine sieve under cold running water until water runs clear.
2. Put quinoa in a pot with 2-1/4 cups water.
3. Bring to a boil, then cover and simmer 20 minutes or until water is absorbed and quinoa is tender.
4. Fluff quinoa with a fork and transfer to a large bowl and allow to cool.
5. While quinoa is cooking, in a small bowl toss beans with vinegar and salt and pepper to taste.
6. Add beans, corn, bell pepper, scallions, garlic, cayenne and coriander to the quinoa. Toss well.
7. In a small bowl whisk together lime juice, salt, cumin and add oil in a stream while whisking. Drizzle over salad and toss well with salt and pepper. Salad may be made a day ahead and refrigerated, covered. Bring to room temperature before serving.

That's more carbs than many of us are allowed in a day! When are they going to get on board with the RECENT research?!
Okay, rant over.

I think a lot of people will never change the way they think, no matter what proof they are shown.
I get a bunch of those newsletters, too. Some of them really drive me nuts!

That would send my blood sugar through the roof (er, well, maybe not by ADA standards).

I like to read that kind of stuff for entertainment value -- to laugh at what they consider "healthy."

What's quinoa anyway?

I have adapted a lifestyle that if I cannot pronounce it, I try not to eat it

Sydney - love your dancing duck!
Renegade - that's one of the things that drive me nuts, my brother's a diabetic and eats loads of carbs. My aunt's also diabetic and the last we visited she serve cake for breakfast! I couldn't eat it. After we left my husband went into a store and got me some meat.
Simon - quinoia is a grain. Though that's all I know about it.

It's unreal how the FDA came up with that pyramid. It's all about money and politics (isn't everything?). And good luck ever getting them to change that stupid thing!
I saw a report on CNN called "America's Killer Diet". It is unreal what is going on.

My dad was diagnosed with Diabetes a month ago. I'm still trying to convince him that his prescribed diet is not necessarily the ideal. He has changed a lot of what he eats, which is a good thing. I just think he would be better served making it a little more low-carb. Of course, I am biased.
