Here's a veggie that I love to use in stir-fries and other Asian dishes.
1 cup or 70 grams shredded = 2g Carbohydrate; 1g Dietary Fiber; 1g Net Carb
Here's one recipe that I've used it in:
Stir-Fried Basil Chicken
