Someone posted this at the Diabetes forum. It is from Suzanne Sommers, who advocates lower carb than the mainstream. I made them last night (using grated cauliflower) and they were good, especially with a little low carb ketchup. My kids even liked them. Not quite like the ones you get at Sonic or from Ore Ida, but a decent substitute. My technique left something to be desired as I ended up with blobs instead of "tots." Maybe I'll do better next time. smile.gif

Cauliflower "Tater" Tots

Serving Size : 50 Preparation Time :10 minutes
Cooking Time: 20 minutes.

Amount Measure Ingredient -- Preparation Method

1 pound frozen cauliflower -- (or 1 lb. fresh)
2 tablespoons water
4 tablespoons butter -- (1/2 stick), at room temp.
2 large egg yolks
1 cup grated parmesan cheese
salt and pepper

Preheat oven to 400 degrees. Place the cauliflower in a 2-quart microwave-safe casserole. Add the water to the cauliflower. Cover with plastic wrap and cook on high for 8 to 10 min., until very soft. (My note: I would steam for 10 min.)

Drain, and place in the work bowl of a food processor.

Add butter, egg yolks, and Parmesan cheese. Process until mixture is smmooth. Season with salt and pepper.

Place mixture in a piping bag fitted with a large plain tip, or put mixture in a large resealable bag and snip off a corner.

Pipe cauliflower mixture in 1-inch lengths onto a greased baking sheet. Bake 15 to 20 minutes, or until browned.

NOTES: From Suzanne: "After you pipe them out, freeze them before you bake them. This helps to retain their beautiful shape. (If you don't have time for this step, the recipe works without it.)

These sound like fun food! I actually have that Suzanne Somers book (got it for $1.60 at the 99% off book store!) and somehow missed that recipe. I wonder how long they would keep in the freezer before baking them. If they keep well, you could just take out and bake however many you need each time. Another recipe to add to my mountain of recipes to try, LOL. My husband keeps complaining that we have too much food in the fridge but someone has to try all these recipes.

Do you think that the problem was too much moisture in the cauliflower? I don't think I would even mind if they came out like little patties as long as they taste good. I think I might add a little grated onion to them for extra flavor.

Linda Sue, It may have been too much moisture. I used grated cauliflower and microwaved it a couple of minutes with a little water. I'd already grated a whole cauliflower for another dish and used the rest for the tots. Maybe it would have been different if I'd done it by the book.

Anyway, the blobs were good and I don't really care about appearances either. Just had to add that comment for entertainment value. I was also thinking that you could fry up "patties" of this as a hash brown substitute.
