Hey people! I have been low carbing for almost 4 months and doing well. My husband is a type I diabetic and has been eating lower carb, yet still having a sandwich for lunch. He has noticed how much better his blood sugars are when he eats lower glycemic veggies and fruits than when he eats potatoes and bread. He has Dr. Bernstein's book and is in the process of reading it, but he wants to start eating Atkins-like from now on.
My question is what to do for his lunches. I eat for lunch a salad/broccoli/califlower/squash along with a protein (chicken, salmon, steak, etc), but I have a microwave at work. 50% of the time he eats his lunch in his truck on job sites than in his office. What do those of you who have this situation do for lunch? Today we did a salad and a pork steak that he might have to eat cold. (he uses a cooler). Any help would be great.

Well, there is chicken saland and egg salad in romaine lettuce wraps. Walmart and Costco carry those Flat out wraps that are high in fiber and low carb, so if he wanted a "sandwich" he could use those instead of bread. How many carbs is he trying to eat a day? I think Dr. Bernstein says 12 carbs per meal. Is that net or??? Has he incorporated yogurt into his diet? Greek yogurt has less carbs and you can add natural SF peanut butter or ground flax to that with some Davinci caramel or vanilla SF syrup and it tastes really good. Hope this helps.

Thanks Lynne, I never thought about the wraps!!! He loves chicken and egg salad, so I will get some LC wraps. I'm starting Dr. Berstein's book this evening, I'm kind of a speed reader. I definately need to find out how many carbs he should eat a meal. Thanks lady!!

Yeah Rit - Josephs Flax Oat wheat low carb wraps, have like 5 net carbs per wrap and are delish! They will be a staple in maintenance for me!
