Barry stopped by our thread Eat Fat, Get Thin on LCF's..!! He surprises us once in a while, which is very nice and we love it..But wanted to share his answer to a question with you.

Karen asked if she was eating too much fat and mentioned that she uses full fat dressings and mayo..Here is his answer:

No matter how careful you are, it is always possible to eat too much and put a bit of weight on. However, scientists at the Faculty of Medicine, University of Geneva in Switzerland, found that the more saturated a fat was, the less likely it was to put weight on. Similarly, they found that fats which were composed of shorter chain fatty acids, were also less fattening.[1]

This is because the unsaturated fats are fully digested to give more calories per gram than saturated fats. As animal fats are a mixture of both saturated and unsaturated fatty acids, a more accurate figure for fats from warm-blooded animals such as cattle and sheep is not 9 kcals, but about 7.5 kcals per gram.

For this reason, fish oils are the most fattening; vegetable oils and olive oil come next; less likely to put fat on are animal fats; and least fattening of all is cocoa butter. This is another good reason to eat the traditional animal fats and tropical oils, and avoid modern processed vegetable oils.

For this reason, I would recommend that you make your own mayo, using a liquid coconut oil if you can get one. The commercial mayos are made of highly polyunsaturated seed oils and not suitable for human consumption in my opinion.

Rozi, looks good to me.

Carolyn, thanks for sharing that info. I too have been thinking about making my own mayo. I buy the canola oil stuff, but even that isn't that good for you. I was going to try making it out of olive oil. I had some in Italy and it was really good. Maybe some day we too will have the pleasure of Barry's company. Thank's again!

As a side note, I had a lady try to give me a sample of the Lower Sugar Cakemix and Frosting at the grocery store today. She was totally convinced that this stuff was actually much better for you. I just said "no thanks" and kept on walking. The good part is if a large manufacturer like Pillsbury is promoting sugar free products then I think it's a myth that the low carb lifestyle is dead.

I have tried and tried olive oil and can't get it to emulsify. The one time it did it was wonderful, much better than other oils. I like garlic and vinegar in mine, and love to put curry in too. That maybe my big problem to many additions. It is a lot of trouble, and doesn't last long at my house.

Rozi: I haven't done real mayo in a while..but the key I have found is to
drizzle the oil..a tiny stream into the egg/vinegar mixture until it is thick, then you can add it a bit quicker...Well, MAYBE too many ingredients might be a problem..I would add them AFTER I made the mayo, then just whirl them in..

Not terribly on-topic for this thread, but I just made my own mayo for the first time tonight. I used my immersion (stick) blender, and the recipe that came with it. I just wanted to share because it was so simple and quick! You just put all the ingredients into a tall container (I used the one that came with the blender), put the blender in holding it down at the bottom of the container, and blend it on a med-high speed until it starts to emulsify. Then move the blender up and down until all the oil is incorporated. I think it took me less than a minute for thick yummy mayo. Now I just need to use it all up in a week smile.gif
Carolyn
Thanks alot..I have always wanted an immersion stick blender..Maybe Santa will bring one..smile.gif

There is a recipe for mayo with my silver bullet but I'm trying to figure out how that will work because the way it's made I can't see how you would drizzle the oil in. I have made mayo before and i've had it curdle before. I've read that if it curdles you just add some more eggs to the curdled mixture and begin adding the oil again. Don't know, I haven't tried that yet.
Kristine
I'm not waiting for Santa to bring me a stick blender! I'm gettin' one tomorrow!

Does anyone worry about the salmonella? I know I can probably get away with it, but I was planning on making this mayo for the children, too. Mom says it's a risk and Grandma says it's nothing to worry about!

What do you all think?

I heard that it's a danger in about 1 in every 10,000 eggs. I never win the lottery so I'm not going to worry. How's they thyroid doing Kristy?

This confirms my experience! Great info! laugh.gif

Who else is really mad at all people who have told us otherwise in our lfie?

I am really mad at Weight Watchers. You know their new way of working out points is not on fats, but of avoiding saturated fats!!

With this information, proven by science, who is going to start up a class action lawsuit against weight watchers.

The evidence is in abundance. Would we be able to prove they knowingly lied?

Maybe not them, but who? Who has been covering this up? Who has lied??

Castration comes to mind as a punishment. laugh.gif Or is that too lenient?

Hey Dave,

Hope the wedding plans are going well. I agree with you about the big WW. I heard the other day that they were owned by Heinz Foods. I guess that explains why they promote eating their diet junkfood full of empty chemicals. How nice to direct legions of customers back to your own company (Heinz). If they happened to manufacture Coconut Oil, I bet they'd change their tune. BTW does anyone know where you can get liquid coconut oil?
Kristine
Melodie,

I don't know about my thyroid yet. I do know my temp today was 95.2 F!! Isn't that pathetic? I was planning to make an appt with my mom's thryroid doc, but she is moving away. The doc that is taking over her practice is not accepting new patients. I think I will change his mind--after all, I'm only going to be seeing him for two or three appts and then only once a year if I turn out to have a problem... I am also doing all I can to support my thyroid as much as possible. The biggest thing is taking Lugol's Solution.

So, hmmm, if it was just me I would definitely eat the raw egg. I'll have to think about this one.

Kris: As a hypo person..get yourself a good dr..Hope that dr. will take new patients otherwise go to someone else!

Medication is the only way to treat your thyroid properly. Of course, eating correctly is all a very important part of this, but you need to get it all checked out..smile.gif
Kristine
Carolyn,

Yes, I definitely will work on that this week!

Dave,
As someone who has spent entirely too much time (being the only guy) in a weight watchers meeting month after (wasted) month, I totally understand the sentiment.

I do however find it ironic that you pick castration as a form of punishment. Does that word mean something else in Australia? I usually associate that punishment with men. wink.gif

(I know, I know...women can be technically castrated too. no need to explain.)
