Coconut Fudge is DEEELISH!!! I got this recipe from a girl named "Julie" on another low carb board a few months ago. It melts in your mouth

Coconut Fudge
Ingredients
4 tbsp Coconut oil
2 tbsp Peanut Butter (or other nut butter of your choice)
2 tbsp Cocoa Powder, unsweetened
Sweetzfree or other liquid sweetener to taste (powdered sweetner does not work well).
Directions
Melt Coconut oil and Peanut butter in micro. Add cocoa powder and sweetner. Mix well. Freeze.

Has anyone tried the extra virgin coconut oil that they sell at Wal-Mart near the vitamins? It's made by Rexall and costs about $10. I was tempted to buy it but was afraid that it might not taste as good as some of the other brands that are available. It's not refined like the Lou Ann brand that Wal-Mart sells near the Crisco.

Niki, can you give us a rough idea how much sweetener to put in? I'm thinking about buying that coconut oil at Wal-Mart so that I can try this recipe.

When I make it, I use around 7 packets of splenda. I tried it with the liquid splenda, but for some strange reason, I liked the taste of the packets better. I then pour it out in a baking pan, freeze it, and then break it up like bark.

To reduce the carb count, I made this with 1T SF DaVinci French Vanilla, omitted the cocoa and reduced the coconut oil to 3T.

5 drops of Sweetzfree = 3 tablespoons granular Splenda
7 packets of Splenda = 1/4 cup plus 2 teaspoons bulk granular Splenda or about 7 drops Sweetzfree *
Christina, have you tried the version with cocoa? I just wondered if you like it better with or without it. Does the cocoa-less version set up as well with the extra liquid from the Da Vinci syrup?
* I just noticed while looking at my
Splenda conversion chart that each packet of Splenda equals 1 drop of Sweetzfree. Never noticed that before.

Yes, I've tried it with cocoa and liked it. I used the SF syrup and it set up just fine. Since I have been trying to keep my carb count down lately and like this equally well without the cocoa, I've been making it without. I tend to be pretty lax with measurements and the only time I didn't care for it was when I had too much coconut oil ... it was too oily then.

Something else just occurred to me. Does the version with cocoa have a bitter taste from the Splenda? I tend to shy away from recipes combining chocolate and Splenda because they can come out bitter. For some reason I don't mind the 3-Minute Flourless Chocolate Cake though.

I used:
2 tbls Coconut Oil
2 tbls natural peanut butter
2 tbls unsweetened cocoa
5 drops of Sweetzfree
Again thank you...this is the best sugar free chocolate I have had.

Kristi, I've got information on various liquid Splenda products on my site
here. As far as I know, most brands of liquid stevia don't have carbs. Sweetzfree has no carbs either.
August, I think you've convinced me to buy some coconut oil so I can try this recipe. My biggest fear is that I won't get four servings out of it. I have a tendency to get just one serving from things like this.

Linda, I put A LOT of sweetener in it

People always say I make things really sweet, and it NEVER tastes sweet enough to me.
If you put in 5 drops and thought it was sweet...I'd probably need 20...lmao!!!
That's why I always say "Sweetzfree or Splenda to taste"

My taste for sweetness is way off

So, Niki, just how much sweetener do you put in yours??? I still haven't tried making the fudge so I don't know if 5 drops will be enough for my taste either. I also tend to like things pretty sweet. For example, I use at least a tablespoon of Da Vinci syrup in my coffee.

I made it today with Sweetfreez and it took 15 drops to make it sweet enough for me.
ETA I always taste it while I'm adding to make sure I get enough.

I would try 15 drops and taste it, and if you need more add them and taste it again. Tasting is part of the fun...lol

I didn't read the directions right and only used 2 tbls of coconut oil.
So maybe that is why I need only 5 drops of Sweetzfree.

Thanks Ginger and Niki. I wonder if it's because of the cocoa that you had to add so much Sweetzfree to offset the bitterness. The recipe only makes between 1/4-1/3 cup of fudge yet you're adding the equivalent of 3/4 to 1 cup of sugar. Of course real fudge is mostly sugar so maybe that makes sense. I'll let you all know how much I end up using once I buy some coconut oil on Thursday.

I bought some coconut oil at Wal-Mart today and I'm going to try to make some of the fudge this afternoon. I'd never tried coconut oil before but the stuff from Wal-Mart is very good. It has a nice coconut flavor.
Since I first saw the recipe, I tried it and it really is good. But , Linda Sue, I do think it has that bitter aftertaste.

I used a combination of Sweetzfree and Slpenda packets until it was sweet enough. I like it well enough to overlook the bitter taste. We have also chopped it and used it with the Silver Bullet to make cherry chocolate chip ice cream using Carolyn's recipe.

I ended up using 1/2 cup worth of liquid Splenda in mine. When I tasted the liquid mixture it tasted VERY sweet so I thought it would be enough. Well, after freezing it the sweetness pretty much disappeared and now I wish I'd used 1 cup's worth of Sweetzfree. Mine didn't taste bitter but I thought that the peanut butter made it a little salty. The carb count isn't bad if you use liquid Splenda but the carbs add up quickly with granular. I think it would be hard to only eat two little pieces and be content and there would be about 7 1/2 net carbs per serving with 1 cup of granular Splenda. With liquid Splenda, there are only 1.5 net carbs per serving.

Sure, I wouldn't know why you couldn't. The only problem I see is that you might want to eat it all in one day! It's that good!

I cut it into 8 pieces that were about 1 to 1 1/2 inches square but they're pretty thin (1/4 inch?). There is no reason that the recipe couldn't be doubled or tripled.
