500 MORE LOW-CARB RECIPES - by Dana Carpender

Tell us which recipes you've tried from this book and what you thought of them, whether they were great or duds. Don't post the actual recipes here because of copyright issues. If you've tweaked one of the recipes to come up with your own version, feel free to post it in the recipes section at the top of this forum.

Jeanette Wiese's Best Pancakes I've Ever Had! - page 114

I can't say that they are the best low carb pancakes I've ever had. They weren't terrible and were quite edible, but they were a bit dry, tough and grainy. Her recipe called for 1 scoop of vanilla whey protein powder and 1 scoop of plain. I only had vanilla so I used 2 scoops of that. She also called for a little Splenda, but I left that out because of the sweetener in the whey powder. As stated in the book, the batter is extremely thick, but despite what the recipe tester said, mine did form bubbles like regular pancakes. I would add a pinch of salt because I thought they tasted slightly flat. I rate them a 2 out of 5.

Trish Z.'s Pork Rind Stuffing - page 138

Don't be deceived by how good this looks in the photo. Although this doesn't taste like pork rinds, it doesn't taste anything like stuffing either. It also has an odd gelatinous texture and sticks in your teeth. After taking the picture, I promptly dumped it into the trash. I rated this a 1 out of 5.

Sesame-Almond Napa Slaw - page 200

This is very good and goes well with Asian-type dishes. I served it with Coconut Chicken and Chutatip's Peanut Sauce. Click here for the recipe[/url]. Dana's carb counts were a bit low. Her book states 2 net carbs per serving and I come up with double that, but the carbs are still very low. I rated this a 3 out of 5.

Spicy Peanut Dressing - page 216

I was going to use this dressing on Dana's Asian Chicken Salad recipe, but I didn't like it. I ended up making a tweaked version of the dressing from Dana's Sesame-Almond Napa Slaw instead. The Peanut Dressing was very thick, oily and curdled looking and didn't taste very nice so I dumped it out. Although the book says this makes 2 servings, the dressing would have been enough for at least 4 servings. I rated this 1 out of 5.

I actually helped with the process of trying recipes for Dana's 500 More Low
Carb Recipe Book. I was paid for my work and I was honest with what I thought
was good and what was ordinary or excellent. So I shall get my book out
and give you the recipes that I thought were good enough to make.

On Page 520 of Dana's 500 More Low Carb Recipes. I reviewed
Laure's Homemade LC "Bailey's Mae" So off I went to the store to get the
ingredients. This was delicious, both my husband, and i enjoyed it a little too
much. After all I was the tester. In fact if you will notice Dana's comments are
"Barbo Gold, our tester, had, er, a good time testing this recipe and says it's tops."

Laure's Homade LC "Bailey's Mae"
2 cups any booze (rum, vodka, bourbon, Southern Comfort, or brandy)
I used vodka, a good brand.
14 oz. heavy cream
1 c. half and half
2 tbs. no sugar chocolate syrup
2 teaspoons instant coffee crystals (de-caff ok)
1 tsp. vanilla extract
1/2 c. Splenda (we only had granular then)
1/2 tsp. almond extract

Combine all in blender and whirl until smooth.
Place in a tall container and keep refrigerated. Stir before serving YUM!

Yeild: 10 servings 1/2 c. each
Each with 274 calories; 17 g fat; 2 g protein; 2 g carbs: no fiber; 2 usable carbs.

These nutritionals are in the book. I have never checked them out.

Once again I tested this recipe for Dana. This one is a little more complex
than the Bailey's and requires cooking. We don't really like Irish Whiskey, but
after all of the ingredients went together it was very good. Especially when I had
a friend who actually likes Irish whiskey said so. Another comment from Dana
on page 521 was that "Our tester Barbo Gold loved this , (Come to think of it, how come Barbo Gold gets all the really fun recipes?)

1 1/4 c. heavy whipping cream
3 egg yolks
1/4 c. Splenda
1/4 c. erythritol (or Splenda)
1 tablespoon DiabetiSweet

Wisk all ingredients together in the order given in a saucepan over low heat.
Stir constantly until thickened and be careful not to overcook. Cool completely
and set aside.

3 eggs (or equivalent egg sub, if you prefer not to use raw egg)
2 tablespoons sugar-free chocolate syrup (like Hershey's syrup
or Walden's Farms)
2 tablespoons vanilla extract
1 tablespoon instant coffee powder (not granular)
1/3 c. water
1 1/3 c. Irish Whiskey

In a blender, blend eggs, chocolate syrup, vanilla, coffee powder and water
until well mixed. Stir in whipping cream mixture and whiskey (don't blend)
Pour into a container with a tight-fitting lid. Refrigerate up to 3 weeks.
Enjoy!

Dana's note: Feel free to use a combined 5 tbs. of any polyol sweetener
in place of erythritol and DiabetiSweet.

Yield: About 20 1 1/2 oz. "shots"
Each with: 112 calories; 7 g fat; 2g protein; 1g carb; -0- g dietary fiber;
1 g usable carb. Carb count does not include the polyol syrup.
