Sirloin in Chocolate Balsamic Blue Cheese Sauce
4 6-oz steaks (cut of your choosing)
Salt & Pepper
1/4 cup Sugar Free lc chocolate sauce
2 Tbsp Balsamic Vinegar
1 Tbsp Butter
Blue Cheese crumbles
Season steaks with salt and pepper. Set aside. Heat a cast iron skillet (or other oven-proof skillet) over med-high heat. Preheat broiler to high.
In a small bowl combine chocolate sauce and balsamic vinegar. When skillet is hot, add the butter; melt and coat pan. Add the steaks. Sear on first side 3 minutes, then turn to sear second side for 2 minutes. Remove from heat and place under broiler on lowest rack. Cook the steaks to your liking:
4 min (med-rare)
5-6 min (med)
8 minutes (well done).
Carefully remove pan from broiler. Remove steaks from pan to serving dish and cover loosely with foil. Add balsamic chocolate mixture to pan and scrape any browned bits with whisk or wooden spoon. Pour sauce over steaks, sprinkle each with 1/2 oz of blue cheese crumbles.
Note: You can create this with unsweetened cocoa powder as well. Increase the vinegar amount slightly and add a small amount of splenda to sweeten.
