This was and is my signature recipe I developed while doing KK as my solution to regularity. Works well for me.
Mocha Almond Oat Bran Flax Muffins
Ingredients
* 1 cup Coffee
* 1 cup Egg Beaters
* 1 tbls Vanilla
* 1 cup Almond Flour
* 1/2 cup Flaxseed Meal
* 1/4 cup Oat bran
* 2 tbls Dried Oats
* 2 tbls Flaxseeds
* 1 tsp Baking soda
* 1 tsp Baking powder
* 2 tbls Cinnamon
* 4 tbls Splenda
Carbs: 7 (g) Fiber 3.5 (g)
No of Servings: 12
Calories: 98 K.cal.
Preparation Time: 10 (minutes)
Cooking Time: 30 (minutes)
Combine all ingredients. Mixture is runny but bakes up firm. Divide in 12 equal portions in muffin pan. Bake 30 minutes at 375.
