PAULA'S EASY CORNED BEEF & CABBAGE
4 pieces bacon, coarsely chopped
4 tablespoons butter
1 small cabbage, coarsely chopped
Salt and pepper, to taste
12 ounce can corned beef, broken into chunks

In a large skillet with a lid, cook the bacon until almost crisp. Remove the bacon to a paper towel-lined plate but keep the fat in the skillet. Add the butter to the bacon fat and melt over medium heat. Add the cabbage and stir until coated with the fat. Add 1/3 cup water and salt and pepper, going easy on the salt. Cover and cook 10-15 minutes, until cabbage is tender. Add the corned beef and bacon. Cook, uncovered, until everything is hot and some of the liquid has evaporated. Adjust seasonings to taste.

Makes 4-6 servings

Hi LindaSue,
this sounds good, but what kind of corned beef do you use? I had bought a can, and was getting ready to eat some, but saw it contained some sugar in it.

Before lc, I used to make corned beef and potatoes, it's really good, and so I thought I could use caulflower in place of the potatoes and mix it with the corned beef. That's when I read the label and saw the sugar.

Yes, the canned stuff does have some sugar in it. However, I don't think it's any worse than eating bacon or pork sausage that has a little sugar in it. Only you can decide if that's too much sugar for you or not. I don't eat those kinds of processed meats very often so I don't see much harm in having them occasionally.

Oh, this looks and sounds heavenly. Thank you Linda Sue. This is my kind of recipe - hearty, quick and easy.

I too keep away from processed meats more than I used to, and would not eat it often, but I'll definitely be making this.

I don't have a can of corned beef in front of me, but I do believe it's as low in carbs as the bacon, hams and luncheon meats allowed on most low carb diets.
