I found a recipe on line for an Atkins Bake Mix copy. Are Atkins Bake Mix and Carbquik basically the same thing?????

Atkins bake mix is mostly soy flour and soy protein isolate. Carbquik is a low carb version of Bisquik that contains no soy. In place of flour, they use an enzyme modified wheat. Tova industries also sells Carbalose (the "flour" in carbquik) in 3lb bags.

Ok - but are they interchangable - can I use one or the other part for part in recipes?

I've used Carbquik a lot but have never used Atkins bake mix so I don't know if it has the fat and baking powder that Carbquik has. What are the ingredients in the copycat bake mix recipe, Vee? As far as being interchangeable in recipes, I think it would depend very much on the recipe.

Hi Linda - mock up Atkins Bake Mix - a soy version and one without. Here they are:-

Atkins Bake Mix - No Soy

Ingredients:
1 cup almond flour
1 cup vital wheat gluten
1 cup unflavoured whey protein powder
4 packets Splenda
2 tablespoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Method:
Sift all together and store in a zip lock bag in the fridge. When a recipe
calls for bake mix, just measure according to the recipe.

Yield: 3 cups

Atkins Bake Mix

Ingredients:
1 cup soy flour
2 cups wheat protein isolate
2 TBSP baking soda
1 tsp salt
2 TBSP Splenda

Method:
Sift all together and keep in an air tight container..
Use in place of Bake mix in Recipes.

Yield: 3 cups

Ok, not sure if this would help or not. But here is a baking mix that is SOY free, but it does have vital wheat gluten. Not sure if you can have that or not with a wheat allergy?? But I'll list this anyways. It is from Cooking TLC by Karen Rysavy.

TLC Baking Mix - SOY FREE

4 cups (265gm) whey protein isolate (960ml)
2-1/2 cups (230gm) oat flour (600ml)
2 cups (190gm) almond flour (480ml)
1 cup (140 gm) vital wheat gluten (240ml)
4 tsp. baking soda (20ml)
5 tbl. baking powder (75ml)
2 tsp. salt (10ml)

Yield: 10cups - 540 cal, 27 g fat (0 sat fat), 32 gms carbs, 8 gms fiber, 47 gm protein, per cup

Unfortunately it's the most "carby" of the three she offers, but the only one without soy.

The interchangeablity is going to depend a lot on what you are making. Carbquick has added fats and levening agents. If you are making pancakes with an Atkins bake mix recipe, and sub the carbquick, you might need to cut back on the baking soda/powder and or on the oil/fat in the recipe.

Or not. Some recipes are very forgiving of a little extra stuff, others are not.

Generally I'd say that you should problalby not sub one for the other (esp. in the case of subing bake mix for Carbalose/carbquick).

Oooh Yvonne, that recipe is pretty carby!!! Jen, wasn't thinking of anything in particular, but have seen a lot of recipes here using carbquik I am from australia and we don't seem to have anything remotely similar, so was going to make my own. The atkins mock up recipes were the only ones I could find so that was why I was wondering if they were pretty much the same thing biggrin.gif
