Carol’s Low Carb Meatballs
My son loves these. I can’t keep enough made. They’re great with Dreamfield’s spaghetti but I like them alone topped with marinara, mozzarella and parmesan.
2 pounds ground beef
½ to 1 cup Bob’s Red Mill Low Carb Baking Mix
5 to 8 eggs
1 cup Parmesan cheese, grated
2 tablespoons Worcestershire sauce
2 tablespoons horseradish mustard
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon liquid smoke
1 teaspoon black pepper
1 teaspoon cayenne pepper
Combine all ingredients in a large mixing bowl until you achieve a consistency where you can form meatballs that hold together. If the mixture is too moist add more baking mix, if too dry add more eggs. Form mixture into about 1 1/2 inch meatballs. Fry in a skillet or deep fryer until browned. Makes about 3 dozen or 36 meatballs. Per 1 meatball: 97 calories, 6 grams fat, 1 grams carb, 9 grams protein,

Carol, the liquid smoke is an interesting twist. I'll have to try that sometime. Might be good in meatloaf too.

Actually, my husband would never taste my meatloaf because he hated his mother's meatloaf. And he freely admits I'm a good cook. So once I made meatballs from my meatloaf recipe and he raved about how good they were. I told him "Guess what? That's my meatloaf recipe." Ha.

That's funny Carol! I never cared for my mom's meatloaf either. I think it was because she put oats in it or maybe it was just too bland. Anyway, I'm just recently learning to like meatloaf. I've been making it for years because my husband loves it (as a ketchup delivery system) so I've gradually developed a recipe that I also like.
