Full Version: Kim's Chili Burgers

Well I love burgers because they are so versatile! I created this with ground chicken and they are so yummy. I eat with melted cheese on top dipped in mayo! Maybe a slice of tomatoe too.
The leftovers I throw in a ziploc in the fridge for a yummy snack or meal in a hurry.

Also spices are not measure because I just eyeball it. I add as much as I would to a pot of chili.


2 lbs ground chicken (makes about 8 burgers)
dash crushed red pepper flakes (hot be careful)
couple dashes chipoltle pepper powder (hot be careful)
Ground Cumin
Chili Powder
Garlic powder
Onion Powder

Mix all together in a bowl and fry in non stick skillet sprayed with pam or other non stick spray until done.

Simple and yummy! Covered in mexican cheese these are so good, but I like provolone too.

I like your idea of putting the chili seasonings right in the burger instead of making chili separately and serving it over the burger. Lately I've become a bit of a burger fanatic. I think I've been watching too much Rachael Ray!

Has anyone had any luck grilling a turkey burger on an outdoor grill? I've been sticking to pan frying them because they seem so much more soft and fragile than beef burgers. I'm afraid of losing them through the grill grate. It's a shame because they'd taste so yummy cooked over a fire. I wonder if partially freezing them would help because I think they would be OK once the meat has had a chance to cook a little. Or, maybe I could microwave them just enough to set the meat and then grill them. Any ideas?

By the way, I'm the grill master in our house now. My husband has been fired from that job (no pun intended) because he made too many hockey pucks. I think it's a guy thing. It's no fun for them if the meat is only going to stay on the grill for three or four minutes. That doesn't give them enough of a full grilling experience or something, LOL. Grilling is more of a ritual for men apparently and getting the meat to the right doneness is secondary. I get my meat on the grill and set the timer for 2-3 minutes, go back in the house and work on the rest of the meal then flip the meat over and give it another couple minutes on the timer and that's it. No more overcooked meat. OK, I'll sit back now and wait for all the guys here to "flame" me, LOL.

Linda you speak the truth! I have taken the grilling hat away from hubby as well,I am convinced he just like making fires. The meat would be carbon which would really burn me up (pun intended) biggrin.gif I love burgers as well so much you can do so much with them.

Hey Linda!

I tried turkey once! Thats it. I hated it. Tastes like ground cardboard if you ask me, LOL but I LOVE ground chicken, probably because its fattier smile.gif

Anyway I haven't tried grilling it, its so soft and I am afraid the grill would destroy it. EEK

EtheralKim, I never eat ground turkey plain. I use it as a sort of a blank canvas to add all kinds of seasonings and other stuff to. I love beef but I also have to pinch pennies. Ground chicken is more expensive than ground chuck here. Oh, and I buy the ground turkey that's got the most fat in it, 85/15, not turkey breast. There is a big difference.

One thing that I like about pan-fried turkey burgers is that, because the meat is so soft, it's easy to shape the patties right in the pan.

Just what is it with men and fire, NativeTongue, LOL?

That is so funny. I always had my hubby do all the grilling and then one day, my daughter came over and grilled chicken quarters and they were great (shes a single parent). she does them on low heat for 40 min, 8 to 10 in a side. My husband grills everything to death and I hadn't even thought about it before. Our hamburger patties no longer look like hocky pucks (or cow pattie as they say in Texas). My chicken is juicy. I time every thing and not by the commercials on tv. Bless his heart. His heart was in the right place.

Now, about the gr turkey. I found some premade turkey patties that were 8 g fat (kimkins). I put Lowery's on them and grill them about 2 min per side. They are great. No card board here. If you want to form your own, buy one of the grills from wally that come apart at the hinges. they are square and are $3.99. I use it for fish and shrimp. Be careful with them. The handle is HOT. I branded my neck, coming to a complete stop to shut the door and the handle slid forward on the cookie sheet branding my neck. I still have a scar and it was 6 weeks ago.

Let me know how you like my ideas.

jonoandemsmom, that's a great idea to get one of those grill things for making turkey burgers. I've wanted to get one for a long time but kept thinking that I wouldn't get that much use out of it. That must have hurt like heck when yours touched your neck. Ouch!

I tried one brand of pre-made turkey burgers once and they were awful. I think they may have been Jennie-O brand from Wal-Mart. They were full of little bits of ground up bone or something. I could have gotten used to the flavor had it not been for the gritty texture. I like being able to mix in my own seasonings anyway and most commercially seasoned things like that contain sugar and other junk.

I haven't had dark meat chicken cooked on the grill in a while and you've made me hungry for it, LOL. When we were kids, my dad would grill chicken thighs and drumsticks with BBQ sauce and we called it "Daddy fried chicken".

Here we go again, but Linda, have you not had chicken quarters because they were high fat or you just haven't had them period. Drat. I can't get away from that thinking.

The burn really hurt and surprised me so much, I had to look around to see if anyone heard what I said. I am putting a scar cream on it. It was what my Dr. suggested.

Nope, it has nothing to do with fat. I just haven't been grilling that much chicken lately and, when I have, it's been breasts. I do recall grilling some boneless thighs not too long ago. I marinated them in a Korean marinade which makes them very yummy. They remind me of that Bourbon Chicken you get at the mall. I hope I haven't given the impression that I'm anti-fat. I LOVE fat, LOL. If I don't get much in my meat, I get it in my side dishes.

I was a little nervous when I saw that a guy had posted in this thread. I thought for sure we were gonna be in big trouble over what we said about guys and grilling/fire, LOL.

I am not like the stereotype guy.

I am more of a Jamie Oliver at home.

I do all the cooking (and washing up), because basically I'm better at it, and do it quicker.

My other half is a 'modern gal'. She was never taught much about cooking.

I seem to have a knack at it.

The other day at work BBQ I cooked teh meat and got lots of compliments.

I know that you don't overcook meat. If anything I like my meat as close to raw as possible! laugh.gif

Linda Sue, it has been at least 15 years since I last grilled turkey burgers--but I think I mixed in some eggs and that worked better.

?????

It has been a long time. I seem to remember that they were still fragile but better.

I remember wondering if freezing before cooking would help, but I don't remember if I tried that or not.

a suggestion: put aluminum foil down on half the grill rack, and let the turkey burgers cook until they start to firm up, then move them over to the open flame half, you still get the grill flavor, but don't have to worry about it falling through the grate.
